And they are quite justified: anyone who has ever tasted Iranian-style rice admires the aroma, flavor, and fluffiness of a satisfying yet unbelievably light and versatile dish that can be combined with kebabs, Iranian stews, and even Indian curries.<\/p>\n\n\n\n<div id=\"you-are-what-you-eat\" class=\"index-title\"><\/div><h2 class=\"wp-block-heading\" id=\"h-you-are-what-you-eat\">YOU ARE WHAT YOU EAT<\/h2>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Many Iranians believe illnesses are caused by an imbalance in the body, and since every food is classified chemically as either \u201chot\u201d or \u201dcold,\u201d illnesses can be treated by consuming foods that counter the imbalance.<\/p>\n<\/blockquote>\n\n\n\n<p>Every <a class=\"wpil_keyword_link\" href=\"https:\/\/surfiran.com\/mag\/10-best-persian-foods-try\/\" title=\"Iranian dish\" data-wpil-keyword-link=\"linked\">Iranian dish<\/a> is put together as a balanced whole. Lamb, mutton, and chicken are \u201chot,\u201d so they are balanced with barberries (as in chicken with barberries\u2014zereshk polo), tomato paste, and dried limes, and served with rice, all of which are \u201ccold.\u201d<\/p>\n\n\n\n<div id=\"daily-bread-nan\" class=\"index-title\"><\/div><h2 class=\"wp-block-heading\" id=\"h-daily-bread-nan\">DAILY BREAD (N\u00c2N)<\/h2>\n\n\n\n<p>Even though rice is now consumed at least once a day, usually for dinner, bread remains Iranians\u2019 staple food. Lightly salted, thinner than barbari, and baked on a bed of hot pebbles, it is especially compatible with the traditional dish of \u00e2b-gusht. You are meant to put the sugar lump, called ghand, in your mouth between your teeth and tongue and let the tea wash over it until it dissolves.<\/p>\n<\/blockquote>\n\n\n\n<p>As you can imagine, the first mouthful is much sweeter than the later ones.
