Preparing the Ingredients

  1. Rinse and Soak Rice: Thoroughly rinse the basmati rice until the water runs clear. Soak the rice in salted water for a minimum of 1 hour.
  2. Prepare Broad Beans: If using fresh beans, shell them. If using frozen, thaw them before use.
  3. Cook Broad Beans: Boil the beans in salted water until tender, then drain.

Cooking the Rice

  1. Boil the Rice: Bring a large pot of water to a boil. Add the drained rice and cook until it’s half-cooked (al dente).
  2. Layer the Rice: Drain the rice. In the same pot, layer the rice, cooked broad beans, and chopped dill. Repeat the layers, finishing with a layer of rice.
  3. Steam the Rice: Add butter or oil and saffron water. Cover the pot with a lid wrapped in a clean dish towel (to absorb steam). Cook on low heat for about 45 minutes.

  1. Fluff the Rice: Gently mix the rice and beans without breaking the grains.
  2. Serve Hot: Serve Baghali Polo hot, either on its own or accompanied by lamb, chicken, or fish.
  3. Garnish: Optionally, garnish with additional saffron or fried onions.
