Khoresht-e Ghormeh Sabzi is one of top Persian foods.

Ingredients:

  • Cubed meat (lamb or beef) – 500g
  • Kidney beans, soaked overnight – 1 cup
  • Fresh parsley, finely chopped – 2 cups
  • Fresh cilantro, finely chopped – 1 cup
  • Leeks or green onions, finely chopped – 1 cup
  • Dried fenugreek leaves – 2 tablespoons
  • Dried Persian limes (Limoo Amani) – 4 to 5
  • Large onion, finely chopped – 1
  • Turmeric powder – 1 teaspoon
  • Black pepper and salt to taste
  • Vegetable oil – 3 tablespoons
  • Water or beef/lamb broth – 4 cups

Instructions:

  1. Prepare the Herb Mixture: Sauté the parsley, cilantro, leeks/green onions, and dried fenugreek in a pan with a bit of oil until they slightly darken, intensifying the flavors.
  2. Brown the Meat: Sauté the onion in a large pot until golden. Add the meat, season with turmeric, salt, and pepper, and brown it.
  3. Simmer the Stew: Add the sautéed herbs to the meat. Pour in water or broth, bring to a boil, then simmer. Add the soaked kidney beans and the pierced dried limes.
  4. Slow Cook: Let the stew simmer on low heat for about 1.5 to 2 hours, until the meat and beans are tender, and the flavors have melded.
  5. Final Touches: Adjust the seasoning with salt and pepper. Add water if the stew is too thick or simmer uncovered to reduce if too thin.
  6. Serve: Serve hot with Persian rice (chelo), typically garnished with fresh herbs and radishes.

Tips:

  • Herb Proportions: Adjust the herb ratios to suit your taste and availability.
  • Dried Limes: Essential for authentic flavor, available in Middle Eastern stores or online.
